Inspirational baking

Students at Muhammadi Madrasah in Birmingham recently took part in Bake a Difference. They held a bake sale which raised more than £400 for Concern Worldwide.

Something for everyone

AS-level students at Muhammadi Madrasah organised the event and sold a range of delicious home-baked cakes, cookies, cupcakes and muffins. They catered for all tastes and appetites with plenty of cakes to go around.

New tradition

The sale itself was an overwhelming success, raising £400.52 for Concern’s lifesaving food programmes. Muhammadi Madrasah hope that taking part in Bake a Difference will become a new tradition for them. The AS-level students are already planning to build on their success next year. Three cheers to such inspirational students – and a big thank you for supporting Concern’s work!

Bake on the streets!

This week, to celebrate the launch of Bake a Difference, we brought Bake to the streets of Belfast.

We asked people in Belfast to tell us about their baking tips and their baking disasters. In exchange, Ande Gray gave them cupcakes and hugs! Watch the video below.

Let the baking commence!

Bake a Difference got off to a flying start yesterday in Concern’s Dublin office. It was a mouth-watering bake-off and the standard of cakes was very high.

Delicious delights

The baking has commenced, and we can assure you that there has been a lot of lovin’ from the oven! The bake-off consisted of every cake under the sun and we were lucky enough to get to sample them all – everything from jam tarts and chocolate cakes to lemon cake and even a haunted graveyard cake! 

A fair bake-off

We had our very own external judge for the occasion courtesy of our local delicatessen Liston’s. Layla ensured that the bake-off was operated in a fair and transparent manner and she judged the cakes according to her expert knowledge of baking. After much deliberation, the blueberry cake was christened the overall winner. But, it was a close contest and judging by the empty plates, it’s safe to say that all of the cakes were winners on the day. Don’t believe me? Take a look at the photo gallery below.

When it comes to baking, we don’t exactly expect waistline-friendly delicacies. But delicious home-baked treats don’t have to be a full-fat affair.

Lean and mean

There are loads of ways to make baking a healthy and nutritious experience without compromising on taste. It’s simply a case of slightly adjusting tried-and-tested recipes and making some clever food choices. Follow our advice and you’ll be baking your way into lean, mean chocolate-machine heaven.

Sweet substitutes

One quick and easy way to ensure that your moments on the lips won’t spend a lifetime on the hips is to swop heavy and full-fat ingredients for lighter options. Here are our top tips:

  • Substitute full-fat milk for skimmed milk
  • Replace one cup of cream with half a cup of low-fat yoghurt and half a cup of cottage cheese
  • Substitute one egg for two egg whites
  • Exchange sugar for sweetener
  • Use cocoa powder instead of chocolate

Lose the muffin top

Baking healthier alternatives is easier than you think, especially when it comes to muffins, tarts, scones and biscuits. Muffins and scones become a whole lot healthier and better for your waistline when you ditch white flour in favour of wholemeal flour and oat bran. Not only do they cut down the calories and fat, they are super tasty too. Plus, these alternatives are high in fibre and good for your cholesterol. Healthy and delicious! What’s not to love? 

Get baking

It won’t take you long to bake these healthy alternatives either. It only takes around 10 minutes to make a muffin mix. Just think how many batches you could whip up in that time to treat your work colleagues or schoolmates? That’s potentially a lot of money you could raise for Bake A Difference!

Insight into Ethiopia

Watch Paul Rankin speak about his experiences of Ethiopian markets, food and life.

Paul said:

In just a few days, this country has captured my heart... Before I arrived I was more than a little bit afraid of what I might have seen. But having been to the field and seeing the support systems and how the people are supported, not just in their practices, but in their diet and for their children, it’s been an absolute delight to see. Does this country need our support? Yes, I think it does. It needs our concern.

Food for thought

In the second of our three video clips, celebrity chef Paul Rankin sees the benefits and results of Concern Worldwide’s nutrition programme in Ethiopia. 

Paul visits one of our therapeutic feeding centres, where he sees how our health workers monitor children suffering from malnutrition. He then watches high-nutrient food being prepared; this food is helping to keep children alive and healthy.

Celebrity chef Paul Rankin travelled to Ethiopia recently to see the work Concern Worldwide is doing there to combat extreme poverty.

In the first of our videos, Paul meets Hawa, a mother of four. Before Concern's help, Hawa’s family was the poorest in their village. But with our support, Hawa has become a potato farmer and can now afford to send her children to school.
